Garlicky White Bean Dip
ingredients
- 2 garlic cloves
- 2 cans (15 oz. each) white beans, drained and rinsed
- 1/4 cup extra virgin olive oil
- 1/2 t. finely shredded lemon zest
- 1 T. lemon juice
- 1 T. finely chopped fresh oregano
- Salt & pepper to taste

In a food processor, whirl peeled garlic until finely chopped. Add beans, olive oil, lemon zest and lemon juice. Process until smooth.

Transfer to a bowl and stir in fresh oregano. Add salt & pepper to taste.

Yields: 2 1/4 cups
