Baked Brie With Roasted Garlic
Brie and garlic!! Wow, if it had chocolate it would be perfect.
ingredients
- 1 whole garlic bulb, pick one with large cloves
- 1 1/2 t olive oil
- 1 T olive oil
- 1 T minced fresh rosemary
- or 1 t dried rosemary, crushed
- 1 round loaf (1 pound) sourdough bread
- 1 round (8 oz) Brie or Camembert
- 1 french baguette, sliced and toasted
- Red and green grapes

1. Remove papery outer skin from garlic (do not peel or separate cloves). Cut top off bulb. Brush with 1 1/2 t olive oil, sprinkle with rosemary and wrap with heavy duty foil. Bake at 425° for 35 minutes.

2. Meanwhile, cut off the top fourth of the loaf of bread and carefully hollow out the bread enough so the cheese will fit in. Cube remaining bread and set aside. Place cheese in bread.

3. Cool garlic for 10 - 15 minutes. Reduce oven temp to 375°. Squeeze softened garlic into a bowl, mash with a fork, and spread on cheese. Replace the top on the bread and brush the entire loaf of bread with the 1 T olive oil. Wrap in heavy duty foil.

4. Bake for 45 - 50 minutes.

5. Serve with baguette, grapes, and the reserved bread.
