Seared Swordfish with Mango Salsa
There’s a clean simplicity to both the fish and the salsa. Pairs well with a mexican rice on the side.
ingredients
- Swordfish steaks
- Paprika
- Chili Powder
- Salt and Pepper
- Olive oil
- For the salsa:
- 1 ripe mango, peeled and chopped
- 3 T fresh cilantro
- 1/2 medium onion
- 1 cup chopped cucumber
- Juice of 1 lime
- Salt and pepper to taste

Salsa: Combine all chopped ingredients. Drizzle with olive oil and smash together with fork. Refrigerate until ready to serve.

Fish: Sprinkle both sides of the fish lightly with chili powder, paprika, salt and pepper. Heat skillet with a tablespoon or so of olive oil (Watch smoke point, though. You can use vegetable oil or an oil with a higher smoke point, if preferred.). Sear the fish on both sides until opaque through center approximately 2-3 minutes per side, time depends on the thickness of the steaks. Let rest for approximately 5 minutes before serving.
