Cheddar Cheese Soup
ingredients
- 1 c. potatoes, diced
- 1/2 c. each: celery, carrots, onion, green pepper, all chopped
- 4 tbsp. butter
- 1 can condensed chicken brother + water to make 3 cups
- dash white pepper
- 2 c. milk
- 1/2 c. flour
- 3 c. or 12-oz cheddar cheese, grated
- 1 tbsp. parsley
directions
Saute vegetables in melted butter. Add broth, water, and pepper. Cover and simmer 30 minutes. Blend milk and flour. Stir into broth. Add cheese. Stir and cook until thick. Add parsley.
