Ellen's Broccoli with Dijon Vinaigrette
ingredients
- 2 lbs broccoli spears
- 4 tsp olive oil
- 1/4 C finely chopped green onions
- 1/2 tsp dried tarragon
- 1/2 tsp dry mustard
- 3 garlic cloves, minced
- 2 T red wine vinegar
- 2 T water
- 1 T Dijon mustard
- 1/4 tsp black pepper
- 1/8 tsp salt

Steam broccoli, covered, 6 minutes or until crisp-tender. Drain; place in a serving bowl.

Heat oil in a small saucepan over medium heat. Add green onions, tarragon, mustard, and garlic; saute 3 minutes.

Remove pan from heat, and add vinegar and remaining 4 ingredients, stirring with a whisk. Drizzle over broccoli, tossing gently to coat. Yield: 8 servings
