This is the only way I will ever make fried chicken.

ingredients

  • FOR BRINE
  • 1 family pack of wings (any chicken)
  • 1 quart buttermilk
  • 1 tbs. minced garlic
  • 1 tsp. black pepper, onion powder, garlic powder
  • 1/2 cup brown sugar
  • 1/2 cup kosher salt
  • FOR DREDGING
  • 3 cups flour
  • 1 tsp. onion powder, garlic powder, black pepper
  • FOR FRYING
  • Oil (peanut or vegetable)

directions

  • 1

    Place buttermilk and other brine ingredients in a bowl and stir until sugar and salt dissolves.

  • 2

    Put wings in brine, cover and refrigerate overnight or 8hrs.

  • 3

    Pre-heat oil to 360 degrees

  • 4

    Mix dredging ingredients together.

  • 5

    Dip chicken straight from brine into flour and fry until golden brown.

  • 6

    Chicken should fry 10-15 minutes depending on what piece of chicken it is.
