RED POTATO SALAD, PAESANO STYLE
Why make that boring stuff with mayo when you can have this piquant, Italian-style potato salad?
ingredients
- 2 1/2 lbs small red bliss potatoes, quartered
- 2 T rinsed capers
- 1/2 C roasted red bell pepper, thinly sliced
- a few cloves chopped garlic, minced
- 1/2 C balsamic vinegar
- 2 T sugar
- 1 t red pepper flakes
- 6 oil packed anchovies, minced
- 1 C (or less) extra virgin olive oil
- 1/4 C chopped mint
- salt, pepper
- parmigiano cheese, grated or shredded

Heavily salt a pot of water, bring to a boil. Cook potatoes until fork tender, about 12 minutes. Drain and transfer to mixing bowl. Mix with capers, roasted bell pepper, garlic, vinegar, sugar, red pepper flakes, and anchovies.

Stir well and cool to room temperature.

Add olive oil, mint and salt & pepper to taste. Sprinkle cheese, and maybe a little more mint, on top. Serve at room temperature.
