Turkey with Wild Rice

ingredients

  • 1 cup wild rice
  • 1 cup long-grain rice
  • 1 (10.5 oz) can condensed beef broth
  • 1/2 cup water
  • 2 cups fresh mushrooms, sliced
  • 1/2 cup chopped onion
  • 1/2 cup green pepper, chopped
  • 1/2 cup chopped celery
  • 1 clove garlic, minced
  • 4 tbsp butter or margarine
  • 1 1/2 tsp salt
  • 1/2 tsp poultry seasoning
  • 12 lb turkey

directions

Cook wild rice, covered in 2 cups boiling water for 30 minutes or until tender. Cook long-grain rice according to package directions using the beef broth and the water. In saucepan cook mushrooms, onion, green pepper, celery and garlic in butter till vegetables are tender but not brown. Combine with wild rice, long-grain rice, salt and poultry seasoning. Rinse bird and pat dry. Stuff wishbone cavity lightly with rice. Sprinkle large cavity with salt. Lightly spoon in remaining rice mixture. Place pins or skewer across opening. Lace shut with cord.
