Chicken Tetrazzani
ingredients
- 7 oz spaghetti, broken into small pieces
- 1/4 cup flour
- 1/4 cup margarine
- 1 cup chicken broth
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 cup whipping cream
- 2 tbsp sherry
- 2 cup cut up chicken or turkey
- 1 can (4 oz) mushrooms, stems and pieces drained
- 1/2 cup grated parmesan cheese

Cook spaghetti; drain.

Heat margarine in 3 qt pan until melted. Stir in flour, salt and pepper. Cook stirring constantly until smooth and bubbly. Remove from heat. Stir in broth and cream. Heat to boiling, stirring consistently. Boil and stir for 1 minute.

Stir in spaghetti, sherry, chicken and mushrooms. Pour into greased casserole dish and sprinkle with cheese. Cook uncovered at 350 degrees until top is golden brown (about 30 minutes).
