Phyllo Pizza Greek Style

- 4 sheets of phyllo dough
- 1/4 cup olive oil
- 1 cup feta cheese, crumble
- 1 cup Stonyfield fat free plain yogurt
- 1 tablespoon white balsamic vinegar
- Sea salt and fresh ground black pepper to taste
- 1 cup baby spinach
- 1/2 cup fresh tomatoes, diced
- 1/4 cup red onions, thinly sliced
- 1/4 cup kalamata olives, sliced
- 2 tablespoons of fresh parsley, chopped
