ingredients
- 3 c. romaine lettuce, chopped
- 2 oz. cooked boneless skinless lean chicken breast, chopped
- 1 roma tomato, chopped
- 1/2 medium cucumber, chopped
- 1/4 c. shredded carrots
- 1/4 c. canned beets, drained and chopped
- 2 tbsp canned sweet corn kernels
- 2 tbsp chopped red onions
- 2 tbsp canned garbanzo beans (chickpeas)
- 2 tbsp reduced-fat parmesan cheese, grated
directions
Place all ingredients in a bowl and toss well to mix.
