ingredients

  • 3 c. romaine lettuce, chopped
  • 2 oz. cooked boneless skinless lean chicken breast, chopped
  • 1 roma tomato, chopped
  • 1/2 medium cucumber, chopped
  • 1/4 c. shredded carrots
  • 1/4 c. canned beets, drained and chopped
  • 2 tbsp canned sweet corn kernels
  • 2 tbsp chopped red onions
  • 2 tbsp canned garbanzo beans (chickpeas)
  • 2 tbsp reduced-fat parmesan cheese, grated

directions

Place all ingredients in a bowl and toss well to mix.
