Marzetti's Veal Scalloppini
ingredients
- 1 1/2 lbs veal cutlets (pounded very thin)
- 1/3 cu all purpose flour
- 1 tsp salt
- 1 cu fresh mushrooms (thinly sliced)
- 1 cu olive oil
- 1 cu finely chopped onion
- 1/2 cu finely chopped celery
- 1 clove garlic minced
- 1 tbsp chopped parsley
- 1 cu beef broth
- 1 cu marsala wine
- 1/4 cu butter
- 1/4 cu grated parmesan cheese
directions
Cut meat into serving pieces. Combine flour & salt; dredge meat in mixture. In lg skillet cook mushrooms in 2 tbsp olive oil until tender 4 to 5 mins. Remove mushroom. Add remaining oil to skillet & heat over high heat. Brown pieces or veal quickly. about 1 min per side. Use more oil if needed. Remove meat & keep warm on platter. Reduce heat. Combine next 4 ingredients (onions, celery, garlic & parsley) in the skillet & cook over med heat til light brown. Add broth & simmer 15 mins. Add wine & simmer 15 mins. Stir in butter & parmesan cheese & cooked veal & mushrooms. Heat through. Makes 6 servings.
