Christmas Sugar Cookies
ingredients
- 2 1/2 C flour
- 1/2 tsp baking soda
- 1 tsp Cream of Tartar
- 1/4 tsp salt
- 1/2 C soft butter (not melted)
- 1/3 C shortening
- 1 1/2 C sugar
- 1 tsp vanilla extract
- 1/2 tsp lemon extract (optional)
- 2 eggs
- 2+ Tbsp milk

Line cookie sheets with parchment paper (best way not to burn cookies)

Preheat oven to 350

Mix flour, baking soda, cream of tartar and salt. In large bowl, blend butter and shortening until shiny, then gradually add sugar and blend well. Stir in flavoring,then beat in eggs until fluffy - add flour mixture in 2 or 3 portions - stir in milk.

Cover bowl and refrigerate to chill, at least one hour - overnight is good too.

Roll out part of dough (about 1/4 inch thinkg) with flour covered rolling pin on lightly floured surface - don’t roll too thin or thick. Place cookie cutters in flour before placing in dough. Bake one cookie sheet at a time for 6 - 8 minutes. Immediately remove from cookie sheet to cooling rack. Frost and decorate when cooled.
