Spanish Coffee Cake

ingredients

  • 2 1/2 c. flour
  • 3/4 c. sugar
  • 1 c. brown sugar
  • 1 tsp. salt
  • 1 c. oil
  • 1 tsp. nutmeg
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 egg
  • 1 c. buttermilk
  • 1 c. powdered sugar
  • 2 Tbsp. milk (or to desired consistency)
  • 1 tsp. vanilla
  • 1 1/2 tsp. cinnamon

directions

Combine flour, sugar, brown sugar, salt, and oil. Remove 1 c. of the mixture and set aside. To the remainder of the mixture add nutmeg, baking soda, and baking powder. Combine the egg and buttermilk then add to mixture as well. Beat well and pour into a greased and floured 9 x 13 inch pan. To the 1 c. of mixture that is set aside, add the cinnamon, mix, and sprinkle over batter in the pan. Bake at 350 degrees for 25-30 minutes. While the cake is baking, make the glaze by combining the powdered sugar, milk, and vanilla and beating well. Once the cake is finished baking, remove from oven, let it cool, then drizzle with glaze.
