Amy Caroline's Pancakes
Need homemade pancakes, enough to feed a small army? Check these out!
ingredients
- 3 cups flour (I usually mix whole wheat and white)
- 2 Tablespoons of sugar
- 2 Tablespoons of baking powder
- 1/4 teaspoon salt
- 4 eggs
- 3 cups milk
directions

In a large bowl combine all dry ingredients making a well in the center. In a small bowl beat milk and eggs. Pour into dry mixture and beat thoroughly. Make sure you are vigorous and you may even take a spatula around the edges to make sure you have no flour clumps. If you need to, you can add more flour or milk to get the right consistency.

Make sure your griddle is hot before you pour the batter on, otherwise the batter will run. Pour on the batter and do your thing. This makes between 15-20 pancakes, depending on how big you make them (I feed an army, remember?). You can also keep them warm in the oven until all are done. Serve with homemade fruit syrup or your favorite brand of real maple syrup. I suppose you an use some of that other store bought stuff... just don’t tell me about it. *shivers*
