Chocolate Amaretto Cheesecake

Crust
  • 2 cups graham cracker crumbs
  • 4 tablespoons cocoa
  • 2 tablespoons sugar
  • 4 tablespoons melted butter
Filling
  • 1 pound cream cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 1/2 teaspoons almond extract
  • 1/3 cup amaretto
  • 2/3 cup sour cream
  • 10-ounces semi-sweet chocolate
  • 1 teaspoon shortening

    Preheat the oven to 300°F. For the crust, blend all of the ingredients together and pan them into the bottom and sides of a springform pan. Refrigerate.

    For the filling, blend together the cream cheese, sugar, egg, almond extract, amaretto and sour cream until smooth. Add 6-ounces of melted chocolate and blend again. Pour into the shell. Bake for 50 minutes, until set.

    Melt the remaining 4-ounces of chocolate with the shortening, until smooth. Spread over the cheesecake and cool until time to serve.
