Linda's Chicken Milanese
After years of trying different recipes, I finally developed a delicious adaption of my own. Enjoy!
ingredients
- 8 skinless boneless chicken breast halves
- 2 large eggs
- 1 cup buttermilk
- 3 cups panko
- 8 oz shredded parmesan cheese
- 1/4 cup chopped fresh parsley, divided
- 2 teaspoons chopped fresh basil or oregano if preferred
- 2 teaspoons coarse kosher salt
- 1 1/2 teaspoons freshly ground black pepper
- 2/3 cup olive oil
- 1/2 cup lemon juice
- 1 cube butter

Using meat mallet or rolling pin, flatten chicken between sheets of plastic wrap to thickness of 1/2 inch. Soak in buttermilk at least an hour. Remove chicken and whisk eggs into any leftover buttermilk. Mix panko, parmesan, half of parsley, basil or oregano, salt, and pepper on plate. Dip chicken in beaten egg and buttermilk mixture; turn to coat. Dredge in breadcrumb mixture, coating completely.

Heat olive oil in large nonstick skillet over medium heat. Add chicken and sauté until golden brown and cooked through, about 5 minutes per side. Transfer chicken to warm oven (225°) in batches. Melt butter in microwave proof cup, add lemon juice when thoroughly melted; set aside. Plate when done; sprinkle with remaining parsley and drizzle with lemon butter when serving. Enjoy!
