Chicken and Apricots
A kids favorite. Quick and easy.
ingredients
- 1 Chicken, skinned & cut up (I use bone in breasts and thighs)
- 2 Tbls. soy sauce
- 2 Tbls. honey
- 1 Tbls. olive oil
- 1 Tbls. chili sauce
- 1/2 Teas. ground ginger
- 1/8 Teas. cayenne pepper
- 1 can apricot halves, drained
directions
Mix all ingredients except chicken and apricots. Pour over chicken pieces in a roasting pan. Cook uncovered for 50-60 minutes at 375. Baste occasionally. About 5 minutes before chicken is done, arrange apricots around the chicken. Baste all with sauce. Cook until apricots are warm. Be sure to double the recipe for each 5 pieces of chicken or the sauce will dry up. Check about half way through and cover if the sauce is evaporating too fast.
