Veal Scallopini
Always John’s request for his birthday dinner
ingredients
- 1/4 c butter
- 1/2 lb mushrooms, sliced
- 1 1/2 T lemon juice
- 1 1/2 lbs. veal scallopini
- 1/4 c flour
- 1 t salt
- 1/4 t pepper
- 3/4 cup dry white wine, sherry or marsala
- 1 t beef stock base or 1 beef bouillon cube
- 1 T minced parsley

Melt half of the butter in large frying pan, add mushrooms, sprinkle with lemon juice and saute for a few minutes. Set aside.

Cut veal into 1" wide strips and dust in flour seasoned with salt and pepper. Melt remaining butter in the fry pan and brown veal. Pour in the wine ad dd beef stock and cook rapidly for a few minutes. Return mushrooms to pan and heat thoroughly. Serve with noodles or rice.
