No Sugar Fruit Cake
This is a lovely treat for people on a sugar-free diet - especially at Christmas.
ingredients
- 8oz Raisins
- 8oz Sultanas
- 4oz Apricots – chopped
- 8oz Grated Fresh Carrots
- 1/4 Pt Apple Juice
- 1/2 Tsp Vanilla Essence
- 12oz Self Raising Flour
- 1 Tsp Nutmeg,
- 1 Tsp Cinnamon
- 1 Tsp Ground Cloves
- 8oz Butter
- 2 Large Eggs
- 4oz Chopped Almonds
- 8 inch Round Tin.

Put fruit, juice and essence in a bowl and steep overnight, covered.

Next day add carrots, beaten eggs and nuts.

Put flour in a separate bowl and rub in the butter.

Add fruit mixture to flour mixture and mix well.

Place in a greased tin. Slow oven 170C, 325F, Gas mark 3 for about 2 1/2 hours.

When top is nicely browned, cover with foil.

Cool on a wire tray in the tin.

**With soft margarine the all in one method could be used.
