Tuscan Tuna
is it salad? is it fish? all i know is it’s delish! (haha)
ingredients
- 3 cups fresh greenbeans, ends cut
- 10-12 small red potatoes
- 1 can white northern beans, rinsed and drained
- 1 1/2 lbs tuna steak
- asian marinade (ginger soy, soy vey, anything)
- 1 large box cherry or grape tomatoes, cut in half
- 1 cup crumbled feta cheese
- 1 can sliced black olives
- 1 red pepper, sliced
- 1 bunch fresh basil
- 1 lemon, sliced
- coarse ground pepper
- dressing (garlic aioli or dressing of choice)

preheat oven to 400
- 2
pour marinade over tuna and let sit for 1/2 hour
- 3
cut potatoes into small pieces and place in roasting pan. pour olive oil, kosher salt, coarse ground pepper on top. stir and roast for 45 minutes, or until cooked.

steam greenbeans

sautee greenbeans and drained white beans in small amount of olive oil and balsamic vinegar. set aside

cut tomatoes in half and mix with sliced olives and crumbled feta

shred basil

sear or grill tuna until brown on outside, pink inside (if searing, do not use olive oil)
assembly

on large platter with curved sides layer green and white beans. add tomatoes, feta and olives.

flake cooked tuna over all.

surround with strips of pepper, lemon slices, and warm roasted potatoes.

sprinkle with shredded basil and coarse ground pepper.

leave dressing on the side
notes
serve with crusty white bread and crisp dry white wine. annie's shiitake vinaigrette is also delicious with this. all ingredient amounts can be adjusted to taste.
