Perfect Corn Bread

  • • 1 cup sifted all-purpose flour
  • • 1/4 cup sugar
  • • 4 teaspoons baking powder
  • • 3/4 teaspoon salt
  • • 1 cup yellow corn meal
  • • 2 eggs
  • • 1 cup milk
  • • 1/4 cup soft shortening


Sift flour with sugar, baking powder & salt; stir in corn meal. Add eggs, milk & shortening. Beat with rotary or electric beater till just smooth, about 1 minute. (DO NOT OVER BEAT.) Pour into greased 9 x 9 x 2-inch pan. Bake in hot oven at 425° F for about 20 to 25 minutes.
