Italian Sausage Soup w/Greens
ingredients
- 6 links or 1 lb. mild Italian Sausage
- 1 small Vidalia or sweet onion, chopped
- 4 – 5 cups low fat chicken broth
- 2 large unpeeled Idaho potatoes, sliced & cubed
- large handful of kale or mustard greens, chopped or torn
- 1/2 - 1 cup low fat milk
- cayenne pepper or red pepper flakes, to taste
- salt & pepper to taste

Remove skins from sausages if in links. Chop sausage into bite size pieces while browning in bottom of stock pot. Add onions. Remove sausage/onions & drain fat. In same pot, bring chicken broth to a boil then add potatoes. Cook potatoes until nearly tender. Add greens. Cook 5 minutes. Add cooked sausage/onions. Simmer 5 minutes. Add milk, pepper flakes, salt & pepper. Simmer 5 minutes. Allow to rest from heat about 10 minutes before serving.

This is a thin broth. Add more chicken broth, milk, or water for desired consistency.
