Banana Nut Loaf
Not a low calorie bread
ingredients
- 1 cup pecan halves
- 2 1/2 cups flour
- 1 1/4`tsp baking powder
- 3/4 tsp baking soda
- 1 tsp cinnamon
- 3/4 tsp salt
- 1/8 tsp nutmeg
- pinch of cloves
- 3 large mashed bananas
- 1/4 cup milk with 1 tsp vinegar
- 1 tsp vanilla extract
- 1/2 cup butter
- 3/4 cup packed brown sugar
- 1/2 cup sugar
- 3 large eggs

Heat oven to 350 grease a 9x5x3 loaf pan. Chop nuts in food processor until coarsely chopped.

Set aside.

Beat butter, & sugars at med speed for 5 mins until fluffy. Add eggs and beat until combined. Mix dry ingredients in a separate bowl and add to the mix a little at a time a alternating with the bananas, milk & extract until all combined. Mix in the nuts. Add to the pan and smooth out evenly. Bake for 70 mins. Test for doneness with a toothpick in the center to see if it comes out clean. If sticky, put back in the oven for another 10 mins.
