Corn and Black Bean Salad
Filling vegetarian meal, perfect for hot summer days.
ingredients
- 1 16 oz. Pack frozen sweet corn (blanched, drained)
- 3 c cooked rice, chilled or rinsed to cool
- 1 15 oz. Can black beans, rinsed and drained
- 1/2 c onions, minced
- 1/2 c red or green peppers, minced
- 1/2 t salt
- 1/4 t pepper
- 4 T lemon or lime juice
- 1/4 t cumin
- 1/4 t chili powder
- 2 T olive oil
- 1 Tomato chopped
- 1 avocado, cubed
directions
In a large bowl, combine all ingredients. Stir until well combined. Season to taste with additional salt and pepper.
