Mexican Quiche

This is a delicious and slightly spicy quiche with a bit of mexican flair! Nothing is better than quiche for a brunch or lunch dish...sometimes I even eat the leftovers for dinner with salad! Serve with avocado and salsa on top and even a bit of sour cream! Enjoy!

ingredients

Corn Crust
  • 2 cups Unbleached Pastry Flour
  • 1/2 cup Whole Wheat Flour
  • 1/2 cup of Corn Masa (Corn Flour)
  • 3/4 tsp. Salt
  • 1 tsp. Sugar
  • 2 1/2 Cup Sticks of Butter
  • 9 tbsp. of Ice Water
  • Makes 2 Pie Crusts
Filling
  • 8 Eggs
  • 1 1/2 cups of Pepper Jack Cheese
  • 1/4 cup Half and Half or Soy Milk version
  • 1 Red Bell Pepper
  • 1 Dark Green Pasillo Pepper
  • 1/2 of a Yellow Onion
  • 1/2 a bunch of Green Onions (optional)
  • 1/2 an Avocado
  • Salsa
  • Sour Cream and Cilantro (for garnish)
  • 2 tbsp. Olive or Canola Oil
  • dash of Chile Powder and Cumin
  • Salt and Pepper to taste
  • Other delicious filling/topping suggestions: Black Olives, Mushrooms, Spinach, Tomatoes, or Jalapenos.

    Step 1: Make pie crust by cutting dry ingredients into the room temperature butter. Make well in center of dry ingredients and mix in ice water. Dough should be crumbly but should stick together when pressed into a ball. Cut dough in half and set half aside for a second quiche or freeze for later.

    Step 2: Chop peppers and yellow onion into small pieces. Heat oil in frying pan on medium heat and add peppers and onion in when oil is hot. Add Chili Powder and Cumin along with a dash of salt and saute until veggies are soft.

    Step 3: Mix eggs, Half and Half, and 1 cup of cheese in mixing bowl and set aside to cool.

    Step 4: Roll out dough between two sheets of wax paper. Lay flattened dough into a pie-plate, and cut off excess dough. Crease edges however you would like to make crust look pretty.

    Step 5: Add cooked veggies to egg mixture and mix until even. Pour mixture into pie-crust and place remaining cheese and green onions on top.

    Step 6: Bake at 375 degrees for 40-50 minutes or until crust is golden brown and a fork comes out clean after insertion.

  • 7

    Serve with Avocado, Salsa, Sour Cream, and a Cilantro garnish.
