Stuffed Cabbage
old family recipe that holds up. warm and delicious on the coldest days
ingredients
- 1 large or two small heads of green cabbage
- 1 yellow pepper
- 1 red pepper
- 2 large onions
- 2-3 stalks celery
- 2-3 carrots
- 1 2lb can peeled tomatoes
- 1 can campbells tomato soup
- 1 can delmonte tomato sauce (any size)
- 2 lbs ground meat (beef, turkey)
- 1/2 cup raw rice
- 1 tablespoon brown sugar
- juice of 1 lemon
- salt and pepper to taste
directions

steam cabbages in large pot for 5-10 minutes.

peel leaves from each cabbage.

when all the large leaves have been removed, cut the remaining heart into pieces.

put leaves aside and cover with moist paper towels.

chop onions and sautee in olive oil in a large pot.

add celery, carrots, peppers, and cut cabbage heart.

add all tomato products to vegetables.

add brown sugar and lemon.

while veggies are cooking, mix meat, rice, salt, pepper and 2 teaspoons of water in a large bowl.

roll cabbage leaves into a pillow around approximately 1 tablespoon meat mixture. secure them with uncolored toothpick.

place all the cabbage pillows into vegetable pot, and cover with any leftover cabbage leaves. cover and simmer for several hours, stirring with a wooden spoon occasionally.
notes
instead of cutting up the peppers, it's also fine to stuff them with meat
