Canton Chicken
ingredients
- 1 LB chciken but into thin strips
- 2-3 beaten eggs
- small bowl of cornstarch
- Sauce:
- 1 1/2 cup sugar
- 1/2 cup water
- 1/2 cup pineapple juice
- 2 TBSP soy sauce
- 1 cup vinegar
- 6 TBSP ketchup
- 1 tsp salt
- shredded carrots
- bell peppers
- pineapple chunks

Dip chicken in beaten eggs, then roll in cornstarch. Fry in hot oil in pan. Place cooked chicken in casserole.

Sauce:

Mix together and heat in pan until boiling; turn off. Add sauce, shredded carrots, pineapple chunks and sliced peppers to chicken in casserole. Bake @ 3550 for 40 minutes.

Serve over rice.
