Lauren's Black Bean Brownies
A favorite recipe from a friend who is a nutritionist. They sound strange, but are delicious and healthy too!
ingredients
- 1 cup black or Romano beans, pureed with liquid
- 1 1/2 cups sugar
- 3/4 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon salt
- 1 teaspoon baking powder (I add this)
- 1/2 cup canola oil
- 4 eggs
- 1 teaspoon vanilla
- 1/2 cup chopped walnuts
- ~1 cup chocolate chips (I add these)
- Non-stick spray

NOTE: sprinkle with powdered sugar or ice if desired (I iced with Nutella). An icing may be made by creaming together 1/4 cup softened butter, 8 ounces cream cheese, 1/2 cup unsweetened cocoa powder and 2 cups powdered sugar. Add 2 tablespoons skim milk a
