Macaroni and Cheese
ingredients
- 3 Tbsp. butter
- 1/2 cup flour (more or less to make thick paste)
- Paprika, salt, pepper
- 2 cups milk (any kind)
- 1 rectangle sharp cheddar cheese
- 1 1b. box elbow macaroni
- Bread crumbs (optional)

Cook 3/4 of box of macaroni according to directions. Drain. (I do this while I’m making the sauce).

Melt butter in stove to oven casserole dish over med-low. Add seasonings and flour, stirring to make a thick paste. Allow flour and butter to cook slightly. Add milk in 1 cup amounts, stirring constantly until thickened after each addition. Add cheese that has been cut into pieces or grated. Stir until everything is melted. Shut off burner.

Fold drained macaroni into casserole dish. You can serve this now or add breadcrumbs over top of the casserole, spray with Butter flavored cooking spray and put in a 425 degree oven until slightly browned. Alternative: you can butter a lasagna glass pan and load the mixture into that. Place sliced tomatoes and breadcrumbs over top and bake as directed above.
