De Angelis Family Ravioli's
ingredients
Dough- 2 cups flour
- 2 eggs
- pinch of salt
- 1/4 cup warm water
- 15 oz container ricotta cheese
- 1 egg
- pepper
- parsley
- Parmesan cheese

To prepare the dough, make a well in the center of the flour and add all ingredients. You can beat it a little with a fork. Work it together and put it on a floured board. If it feels too soft then add a little flour, Knead it and put it under a dish for a while.

In the mean time you can prepare the cheese filling, by mixing all the ingredients together.

Roll the dough pretty thin and cut it in half. Put about a tablespoon of filling about 2 inches apart from each other on one layer of the dough. Fold the other half of the dough on top, then cut out each cheese section with a round glass. Use a fork to close the sides so they don’t break open. Boil the ravioli’s until they float then they are done.
