Corn Vadas
ingredients
- 1 cup chick peas, soaked for 3 hours
- 2 cups corn kernels
- 1/2 cup cashew nuts
- 1 tbsp chopped green pepper
- 1/2 inch piece of ginger
- 2 tbsp grated unsweetened coconut
- 1 tbsp fresh coriander leaves, optional
- 1 tbsp lime juice
- 1/4 tsp cayenne pepper
- 1 tsp salt
- vegetable oil for deep frying

Grind together in a food mill the soaked and drained chick peas, corn, cashew nuts, green peppe, ginger, coconut, coriander leaves and lime juice. Mix in the cayenne pepper and salt.

Shape into small doughnuts about 2 1/2 inches in diameter and fry in hot vegetable oil. Serve with hot chutney.
