From Grandma Pete

ingredients

  • 3 c. sugar
  • 1 c. white Karo syrup
  • 1 c. water
  • Pinch of salt
  • 2 egg whites, beaten
  • 1 t. vanilla

directions

    Mix sugar, Karo syrup, and water in heavy pan and cook to hard ball state on candy thermometer. DO NOT STIR.

    Beat egg whites till they form peaks. Pour hot syrup slowly over egg whits while beating. When candy has lost its glossy appearance, add vanilla and chopped pecans or walnuts. Pour into a pan. Gently press into pan and cool. Cool well before cutting.

    NOTE from Grandma Pete: Do NOT make this candy on a cloudy day, it won’t get hard.

Grandma made this every Xmas. And, when I was older, we would make this together many times during the holiday season. She would say, "You need to learn how to make this, as one of these days I won't be here and you girls will have to make this candy!"
