Corn with Bacon Casserole
ingredients
- 1. 1/2 cup chopped red bell pepper
- 2. 4 green onions, diced
- 3. 1/4 cup butter, melted
- 4. 2 (8-ounce) packages cream cheese
- 5. 1 cup sour cream
- 6. 1 teaspoon salt
- 7. 1/2 teaspoon ground black pepper
- 8. 3 (16-ounce) packages frozen whole-kernel corn, thawed
- 9. 1 (12-ounce) package bacon, cooked and crumbled
- 10. 1 cup crushed potato chips

1. Preheat oven to 350°.

2. In a large skillet, sauté bell pepper and green onions in butter over medium-high heat on stovetop for 5 minutes. Add cream cheese, stirring until melted. Remove from heat.

3. Add sour cream, salt, and pepper; stir. Add corn and bacon, stirring to combine. Spoon into a 9-x-13-x-2-inch baking dish. Top with crushed potato chips.

4. Bake for 35 to 45 minutes, or until hot and bubbly.
