Harvest Salad

ingredients

Salad Ingredients
  • 4 ripe Bartlett pears, chopped
  • 1 TBS lemon juice
  • 3/4 C dried apricots, chopped
  • 3/4 C dried figs/dates, chopped
  • 3/4 C golden raisins
  • 1/2 C Craisins
  • 1 small red onion, chopped
  • 1/2 bag spinach or other lettuce
  • 1/2 C toasted chopped walnuts
  • 1 (4 oz) pkg crumbled Gorgonzola or Bleu cheese
Cider Vinaigrette Ingredients
  • 3 TBS apple cider vinegar
  • 1 garlic clove, pressed
  • 1 Tsp Dijon mustard
  • 1/2 Tsp sugar
  • 1/3 cup olive oil

directions

    Toss pears and lemon juice in bowl together - add apricots and next 5 ingredients (to onion) together. Chill for 1 hr or up to overnight.

    Toast walnuts. Place lettuce on bottom of salad bowl, place fruit mixture, toasted walnuts and cheese on top.

  • 3

    Whisk together vinaigrette ingredients and pour over salad before serving.
