Pie - Black Bottom Pie

ingredients

  • 1 10-inch baked pie shell
  • 1/2 cup sugar
  • 1 Tbsp cornstarch
  • 2 cups milk, scalded
  • 4 eggs, separated
  • 6 oz semi-sweet chocolate chips
  • 1 tsp vanilla
  • 1 Tbsp (1 envelope) unflavored gelatin
  • 1/4 cup cold water
  • 1/2 cup sugar
  • 1 cup heavy cream, whipped
  • Chocolate sprinkles

    Combine sugar and cornstarch.

    Very slowly add scalded milk (milk that has been heated just to boil with bubbles around edge) to beaten egg yolks (you do not want the hot milk to cook the eggs). Stir in sugar mixture. Cook in top of double-boiler, stirring constantly, until forms a custard that coats the spoon.

    Add one cup of custard to the chocolate chips. Stir until chocolate is melted. Add vanilla. Pour into bottom of baked and cooled pie shell. Chill in refrigerator.

    Soften gelatin in the cold water and add to remaining hot custard. Stir until dissolved. Chill until slightly thick.

    Beat egg whites, adding sugar gradually until mixture stands in stiff peaks. Fold in custard-gelatin mixture. Pour over chocolate layer and chill until set.

    Garnish with whipped cream and chocolate sprinkles.

This was (and still is) Jack's favorite pie. Mom even made one for him after he had his tonsils out with no crust.
