Pie - French Silk Chocolate Pie

ingredients
- 2 cups butter, softened
- 1 1/2 cups sugar
- 4 (1 oz) squares unsweetened baking chocolate
- 2 tsp vanilla
- 4 eggs
- 1 9-inch pastry or chocolate crumb pie shell, baked and cooled

In the top of a double boiler, heat chocolate, stirring occasionally until chocolate is melted and smooth. Remove from heat and allow to cool to lukewarm.

In a large bowl, cream butter and sugar until very fluffy. Blend in the melted chocolate and vanilla. With an electric mixer on medium speed, beat in the eggs, one at a time, taking 5 minutes for each egg (I know this is a pain but it is what gives the pie its silky texture).

Pour filling into baked and cooled pie shell. Refrigerate 4 hours before serving.

For decoration, can drizzle melted chocolate chips and shortening over top. Add whip cream and chocolate curls.

Very rich so a little goes a long way. Sometimes I add some coconut to the pastry crust.
