Healthy Breakfast Cookies

When you have no time for breakfast, or need a filling snack towards the end of the work day, this Breakfast Cookie will energize and fill you up with healthy super foods.

ingredients

  • 2 cups whole wheat flour
  • 1 1/4 cups rolled oats
  • 3/4 cup granulated white sugar
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • 2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 cup dark chocolate chips
  • 1 egg
  • 1 tsp. vanilla
  • 1/2 cup pumpkin puree
  • 1/2 cup natural peanut butter

    Preheat oven to 350 degrees. Mix together all of the dry ingredients including the chocolate chip cookies in a large bowl. Mix the egg, vanilla, pumpkin and peanut butter in a small bowl. Pour the wet ingredients into the dry ingredients and mix well.

    Prepare 1 large or 2 smaller size cookie sheets by greasing them. Measure out 1/5 cup of dough for each cookie. Roll into a ball and flatten into a cookie shape with the palms of your hands. Place on cookie sheet about 1" apart. Bake 8 - 10 minutes. Cookies will be soft. Remove and cool for 10 minutes.

    Place in freezer bags after cookies have completely cooled. Makes 22 cookies. Note: These are great “give-away” cookies. Just wrap them individually and use the labels provided below for a fun addition to your superfood gift!
