Hot Spinach Dip

This recipe is easy to halve for fewer people.

ingredients

  • 2 (10-ounce) packages frozen chopped spinach, thawed
  • 2 (8-ounce) packages cream cheese, softened
  • 2 cups shredded Monterey Jack cheese
  • 1 cup freshly grated Parmesan cheese
  • 1 small onion, chopped
  • 1 (14-ounce) can artichoke hearts, drained and chopped
  • 1 (10-ounce) cans diced tomatoes and green chiles, drained
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder

    Drain spinach; press between layers of paper towels to remove excess moisture.

    Combine spinach, cream cheese, and remaining ingredients, stirring well. Spoon mixture into a greased 2 1/2-quart baking dish. Bake, uncovered, at 350 degrees for 30 minutes or until bubbly. Serve with melba toast rounds or corn chips.
