Mixed Greens with Pears and Raspberry Vinaigrette
ingredients
- 2 small heads red leaf lettuce, torn
- 1 pear or apple, sliced thin
- 4 ounces blue cheese, crumbled
- 1/2 cup chopped pecans, toasted
- 1/2 cup canola oil
- 1/4 cup raspberry vinegar
- 1/4 cup chopped dried cranberries
- 1 teaspoon sugar

Toss the lettuce, pear, blue cheese and pecans in a salad bowl. Add the Raspberry Vinaigrette and mix until coated.

To make vinaigrette: whisk the canola oil, vinegar, cranberries and sugar in a bowl until the oil is incorporated. Store in the refrigerator.

To toast nuts, spread in a single layer on a baking sheet. Toast at 375 degrees for 7-10 minutes or until golden brown and fragrant.
