CrockPot Roast Dinner
I like to cook this one as long as possible so it falls apart. Just watch it so it does not run out of liquid.
ingredients
- Roast Beef cut of your choice, eye of round, sirloin tip, beef chuck
- 1 carton beef stock
- 4 carrots, peeled and cut up
- 4 potatoes, peeled and cut up
- 1 small onion
- 1 envelop Lipton dry onion mushroom soup
- 2 cloves garlic
- 1 tsp thyme
- S&P to taste
directions
Put roast, garlic cloves, lipton soup and spices in crock pot. Add beef stock, onions and enough water to bring half way up roast. Put potatoes and carrots around roast. Cover and cook on low 8-10hrs or high 6-8hrs. Roast should be fork tender when done.
