Tishpishti - Reggie Amira
Grandma and Reggie Amira played Mah Jongg together every Tuesday afternoon for 40 years!
ingredients
Tishpishti- 5 large eggs
- 3/4 cup sugar
- 1 cup oil
- 1 1/4 cups matzo meal
- 1 large orange -- grate skin & use juice
- 1 cup walnuts -- chopped
- 1 cup sugar
- 1 1/4 cups water
- 1/2 lemon

Preheat oven to 400°. Mix eggs, sugar and oil thoroughly. Add juice and rind of orange. Add matzo meal and chopped nuts. Mix well until mixture is moist and pour into well greased pan. Cut across with straight lines then cut diagonal at length into diamond shapes. Place 1/2 of a walnut on the top of each section. Reduce oven heat and bake for 45 minutes at 350°.

Cool for 5 minutes. Slowly pour syrup all over the top of the cake. Cover with a towel and let stand overnight and then refrigerate.

Mix syrup ingredients and cook over low heat until slightly thick. Cool.

Use either a square Pyrex dish or if it seems too small use a long one. Mom wasn’t always clear on her servings and pan sizes.
