Green Bean & Beet Salad
ingredients
- beets -- peeled
- breen beans -- halved
- bacon
- goat cheese -- crumbled
- rosemary
- thyme
- salt and pepper -- to taste
- Vinaigrette:
- 1 shallot -- minced
- thyme
- light brown sugar
- balsamic vinegar
- olive oil
- salt and pepper
directions
Preheat Oven to 425 degrees.
Season beets with salt, pepper, rosemary, thyme and olive oil. Roast in oven for 1 hour. Let cool and dice.
Blanch green beans and place in an ice bath.
Bake bacon in oven at 375 degrees for 20 minutes.
In a bowl, mix beets, green beans and crumbled bacon and goat cheese. Mix all ingredients for vinaigrette and spoon over salad. Serve cold.
