  • 1 8 oz. can Green Chilies
  • 1 4 oz. can Jalapeno Peppers (mild)
  • 1 lb. grated Monterey Jack Cheese
  • 12 eggs
  • 16 oz. Sour Cream


  • 1

    Scrape all seeds out of the chilies or use all Green chilies and no jalapenos.

    Drain and dry the chilies; layer them with the grated cheese in a buttered 13x9" baking dish.

    Combine the eggs and sour cream, beat and pour over the chilies and cheese.

    Bake for 30 minutes at 350 until it puffs like a souffle.
