Classic Caesar Salad
I love Caesar salad, and this dressing is really delicious. I don’t like to use raw egg yolk which is common in traditional Caesar dressings, but feel free to add it back if you prefer. I also like to keep the Romaine in long, whole pieces, rather than chopping it up.
ingredients
- 2 heads romaine lettuce
- 1 tsp minced garlic
- 6 canned anchovy fillets (mashed or pureed)
- 1 tsp Dijon mustard
- 1/4 cup fresh lemon juice
- 1/2 cup freshly grated Parmesan cheese
- 1/3 cup olive oil
- 20 freshly baked croutons
- 1 tsp freshly ground white pepper
directions
- 1
Wash the lettuce and remove all outer leaves. Keep the leaves long or cut into large squares. Spin or wipe leaves dry.
- 2
In a large salad bowl, mix the garlic, anchovy, mustard, lemon juice and parmesan. Add the lettuce, olive oil and croutons and mix well. Add white pepper and continue to mix. Serve and top with shaved parmesan.
