Hot Shrimp with Soy Scallion Dip
A delicious simple preparation- great for a summer night on the deck
ingredients
- 1 pound large to medium shrimp
- 3 tablespoons soy sauce
- 1 teaspoon rice wine vinegar
- 2 scallions, thinly sliced
- 1 tablespoon of peanut oil
- 1/4 teaspoon of chili oil
- 1 teaspoon of salt

Set up a large pot of water to boil. Meanwhile, wash the shrimp in a large strainer under cold water. do not remove shells.

To prepare dip, combine soy sauce, rice wine vinegar, and scallions in a small ceramic bowl.

Place the oils in a small pan and cook over medium heat fro 3 minutes.

When the pot of water comes to a boil, add the salt and the shrimp. Reduce the heat to medium and cook 3 minutes. Transfer cooked shrimp with a slotted spoon to a serving bowl. Do not rinse.

Bring the hot shrimp and dip to the table, along with a bowl for the shells and plenty of napkins.
