Cocktail Shrimp
A deliciously different change from everyday shrimp and cocktail sauce!
ingredients
- 3 lbs large or jumbo shrimp
- 1/4 cup dry sherry
- 3/4 cup olive oil
- 2/3 cup white wine vinegar
- 1 tbsp fresh or 3/4 tsp dry tarragon
- 1 1/2 tsp sugar
- 1 1/2 tsp salt
- 3/4 tsp pepper
directions
Shell and devein shrimp. Bring sherry and 6 cups water to a boil. Add shrimp, heat to boiling. Reduce heat to low. Simmer 1 minute or until shrimp are pink. Drain. In large bowl, mix remaining ingredients. Add shrimp, toss to coat. Cover and marinate shrimp for at least 6 hours or overnight, tossing frequently. Drain before serving.
