Debbie's Boiled Raisin Cookies
From Debbie Heddinger, Therese’s niece. A favorite from her grandmother.
ingredients
- 1 c. raisins
- 1 1/2 c. sugar
- 3/4 c. shortening..I use the butter flavor shortening
- 2 eggs
- 1/2 c. raisin water
- 1 tsp. vanilla
- 2 1/2 c. flour
- 1/2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. cloves
- 2 c. rolled oats
- 1 c. chopped nuts (optional)

Simmer raisins in water over low heat 15 minutes to plump them. Drain off in liquid into measuring cup; saving 1/2 cup. Mix shortening, sugar, eggs and vanilla. Stir in raisin liquid. Stir together flour, baking powder, baking soda, salt, cinnamon and cloves. Gradually stir into the batter; add oatmeal, nuts and raisins. Drop by teaspoon about 2 apart on ungreased baking sheet. Bake 10-12 minutes in 400 oven. Yield: 6 dozen
