ingredients
- 4 cups Beef Stock
- 4 medium Beets (approx 3 cups), peeled and cubed
- 2 medium Carrots, chopped
- 1 medium Onion, chopped
- 1 Bay Leaf
- 1 Tbsp Vinegar
- 1 Tsp Sugar
- 1 Tsp Salt
- 1/2 Tsp Pepper
- 1/2 small Cabbage, shredded
- 16 oz tin Diced Tomatoes

Cook all but the Cabbage and Tomatoes for 40 minutes

Stir in Cabbage and undrained Tomatoes
- 3
Cover and cook for 35-40 minutes more
