Berkshire Pie
Rich, broccoli and cheddar-cheese pie
ingredients
- 1 9-inch pie crust (I buy smith’s frozen
- Filling:
- 2 T olive oil
- 4 cups cubed onions (4-5 medium)
- 1 1/2 cups chopped green cabbage
- 2 1/4 t salt (I use 1 t)
- 2 t dried basil
- 2 t dried thyme
- 2 t dried tarragon
- 1 t black pepper
- 2 1/2 cups small broccoli florets
- 2 cups mild cheddar cheese
- 1 1/2 cups ricotta cheese
- 1/2 cup sour cream
- 3/4 cup of grated carrots
- 1/3 cup flour

1. In large deep skillet, heat olive oil and saute the onions for 3-5 minutes or until translucent.

2. Add the cabbage, salt, basil, thyme, tarragon and black pepper. Saute on medium heat for 5-10 minutes. Turn off heat.

3. Add broccoli, cheddar and ricotta cheeses, sour cream, carrots, and flour and mix together well.

4. Pour mixture into prepared pie shell and bake for 40 minutes at 375. Let cool for 5-10 minutes before serving.
notes
I often substitute the the dairy products with the low-fat version and don't really notice a difference
